A show riddled with technical issues for some reason…so let me apologize for it right up front! Head pit master of HomeBBQ.com joined me to talk about cooking a turkey outside on the barbecue pit.  We cover all of the elements from prep to finished plating, albeit a little rushed.  Kevin talked about brining and what it does, what would to use for smoke flavor and what to do after the bird is done barbecuing.

In the following segment, I was joined by my Mom Connie Rempe.  She shared some of her favorite side dish recipes for the big T-Giving Holliday!  These will be available on my website, or, you can email me at bbqcentralradio@gmail.com and put “Recipes” in the subject line and I will send them to you!

Tonight I was joined by famed cook book author and master barbecue and griller, Ted Reader.  I had him on a few months ago but tonight we focused on “PLANK COOKING” on the grill.  Ted talks about the basics of plank cooking and then throws out some pretty wild ideas regarding food items to cook on a plank.  PLEASE visit Ted at his website, www.tedreader.com to learn more about him and to buy his award winning products.

In the 3rd segment I was joined by master pit maker, Jay Curry.  Jay makes the Spicewine brand of cookers.  These units depart from the horizontal type cookers and go in the opposite direction.  They are powered with charcoal and wood chunks and are vertical in stance vs. horizontal.  Jay describes how he got in to the pit making business and how his unit is different from other pits in the market today. Tonight I had on Kell Phelps of the National BBQ Festival.  This event houses the Best of The Best BBQ cook-off this coming weekend in Douglas, GA.  Kell explained how the even got started, how the event runs, what there is to do at the festival besides the bbq stuff and why there event differs from The Jack Daniels and other big bbq events.  You can check out his websites at www.nationalbbqfestival.com and www.barbecuenews.com

In the Third segment, I interviewed the new champ of the Jack Daniels cook-off.  His name is Kelly Wertz from 4 Legs Up BBQ.  I learned how he got in to the whole competition BBQ scene, how he got invited to the Jack and what his thoughts of winning the whole thing were!  As of now, Kelly does not have a website to visit.

In the fourth segment, I was joined by Danielle Dimovski from the BBQ Team Diva Q.  Danielle competed at the Jack the weekend prior and finished 40th out of 79 teams which was a great finish.  She and her team are now heading to Douglas, GA to compete in the Best of The Best competition this coming weekend.  She talked about her experience at the Jack and what she expects from the Best of The Best this coming weekend.  Her journey is all the more impressive as Danielle and her team are from Barrie Ontario Canada!  Visit her site at www.divaq.ca

The Jack Daniels BBQ Cook-Off is taking place this coming weekend.  I spoke with the defending champ Chad Hayden of Moonswiners BBQ Team in the second segment.  We spoke about the possibility of him defending his title, if the competition is worthy of the praise and other items related to this exciting event.

In the third segment I talked with Mike Davis of Lotto Bull BBQ Team.  Mike has done the Jack 6 years running but has yet to score a victory.  We talked about his chances this year, why the title has alluded him and his thoughts on the mystique of the Jack.  Find out more on Mike at www.lottabullbbq.com

My guest tonight was bbq legend Johnny Trigg.  Johnny is the pit master of the Smokin' Triggers competition team.  He told me how he got in to bbq, what kind of pit he uses, if he would rather win the American Royal or the Jack Daniels and a number of other items related to barbecue.

A jammed packed show tonight.  I was joined by Bob Beeman of Gold Bar-B-Q. We talked about his success at the Oregon State Fair, how much he pocketed during the competition ($6,500) and how he has quickened his learning curve regarding bbq competitions.

Two great guests on the show tonight.  Kevin Taylor, who is a backyard bbq expert, talks about why he uses the Weber smoker and also shares a few great recipes as well.  I also was joined by BBQ legend Myron Mixon who runs the pit for Jack's Old South.  We cover a number of topics from techniques, to injection bases to his thoughts on judging bias.

Welcome to the first round of "The BBQ Round Table"...tonight I was joined by Kevin Bevington of HomeBBQ.com, Rod Gray from Pellet Envy and Jim Minion of Two Loose Screws BBQ.  In a panel discussion, we talked about the bias that exists at barbecue competitions...specifically regarding how judges score on what they think it should be vs. adhering to the rules of the competition.  We also explored the garnish issue and debated if garnish should be removed as a "optional" item in KCBS and be made either a requirement or remove it all together as they do in the Florida Barbecue Association.

Most of the show was spent talking with Lee Ann Whippen from Wood Chicks Barbecue.  She was the most recent contestant on the "Throw Down with Bobby Flay" series of the Food Network.  She beat him down in to submission like a good bbq sister should have done!!  She talked about how the whole Throw Down was set-up, what it was like to meet Bobby and what it was like to cook against him.  This was a great interview and will be a favorite of mine for years to come!!  Thanks to Lee Ann for coming on the show!! Segment One: Show intro and overview - I announce the fact that real music will be going by the way side starting next show and then I rip apart the "Searing/Sealing in the Juices" myth that is continually perpetuated on all of the cooking shows you see on TV.  It just doesn't happen the way they tell you it does!  Shame on Bobby Flay!!

Segment Two: Interview with Chris Finney creator of the "Reverse Sear Method" when grilling steaks and roasts.  He explains exactly how to do it, and, what happens to the meat doing it his way vs. the traditional sear first then finish on low heat method that most people are familiar with.

During this show I recapped what barbecue is and what grilling is and how they differ.  In the second segment I interview Eric Krause, President of the Original Charcoal Company and learn about the charcoal industry.  In the third segment I start to give my personal recommendations on what grills to buy and from what manufacturers.
