The BBQ Central Radio show is the culmination of many things. The love of barbecue and grilling, the love of radio and all it does for people and the desire to spread knowledge on this subject. Host Greg Rempe founded The BBQ Central Forum in 2004 and it has since grown in to one of the most popular forums of its kind. It was only a matter of time before a new segment of the forum was born...welcome The BBQ Central Show.
The BBQ Central Show started in podcast only form in 2005. Back then it was the only podcast covering this kind of subject matter. In February 2008, Greg found Sam Hasson of LA Talk Radio and the live version of The BBQ Central Show was born. The show continues to be one of the most popular shows on the LA Talk Radio station and does huge downloads on the podcast side.

During the 2nd segment I will be joined by Mike Wozniak, Pitmaster of Quau. As in years past, Quau has been veing for top spot in the KCBS Team of the Year standsings the entire competition season...they have had the #1 spot a number of different times during this year so far...which is the spot they currently hold in the KCBS. Back in 2006 they shared Team of the Year honors with Lotta Bull BBQ teams. In the past 5 years they have finished no lower than 12th in the TOTY standings with four of those years being in the top 10. Mike is a seasoned bbq veteran and will be talking about his competition experience and giving us some insight in to the sub-culture of competition bbq.
During the 3rd segment, I will be joined by new monthly guest of the show, Robyn Medlin (aka Grill Grrrl). Robyn is a very successful food blogger and has made a number of TV appearances in her home state of Florida. Robyn will share a few recipes she has been working on and bring us up to date on her partnership with McCormicks and the summer grilling video series she and a few other food bloggers have been shooting. During the 2nd segment I will be joined by John Patty, Pitmaster of JP Custom Smoke barbecue team. John was part of the show during the competition round table shows that aired earlier this year and earned a spot to come back for his own segment tonight. He will talk about his year so far in competition, what's good and bad with the KCBS as it sits right now, how his custom pit building business is going and he will offer up some advice for the folks looking to break in to the circuit. john is very knowledgeable and always brings good energy tot he show.
During the 3rd segment I will be joined by a true legend in the world of BBQ, Jim Minion. Jim is 1/2 of the bbq team that makes up 2 Loose Screws, he owns a high end bbq catering business and was finally give credit (By Weber) for his method of firing up many of the charcoal cookers in use today (The Minion Method). Jim has had years of experience with Waygu briskets and other high end products and is a true expert when it comes to this type of meat. With the emergence of TV shows revealing what many contestants are using out there these days, I will ask Jim if the Waygu brisket craze is just a fad, if it can really make or break a team at a competition, if its higher price tag is worth it, if the mouth feel and flavor profile is different and the best way to go about cooking it. This is a segment you will not want to miss!

During the 2nd segment I will be joined the Sales and Marketing Director for a MAK Grills, Bruce Bjorkman. MAK is a new pellet fired cooker which has recently hit the market to some very good reviews. MAK claims to have the most sophisticated controller in the industry along with being manufactured right here in the USA unlike some of its competition. I will ask him how the ratings are, what the word on the street is from regular viewers and if TLC has given him the green light for a 2nd season. During the 2nd segment I will be joined lead singer of the band Three Years Hollow. This band has been dubbed the “unofficial” band of the show. A few months ago when I went to using legal music for my show this band allowed me use of their music. They are currently unsigned and are looking to make it in the music business...they are a rock band in the same vain as Godsmack, SevenDust and Disturbed. Jose Urquiza will join me to talk about the band, how they formed and what's it’s like to try and make it in the music business during this time of technology and social media...should be a great interview!

The KCBS Team of the year race has been decided!! In one of the most epic races in recent memory, Rod Gray and Pellet Envy won Grand Champion in Tempe, AZ thus assuring them Team of The Year honors. Rod will join the show right off the top to talk about this great win!

Myron shared why he thought that was, his thoughts about the judging and who he thinks might take the prize if he doesn't.
Friend of the show, Ray Lampe, joined me during the third segment to recap how Tailgate Warriors shook out. This TV show aired on the Food Network and pitted Chicago tailgate pros against Buffalo tailgate pros in Orchard Park, NY during the Bills first pre-season football game this year. Segment 1: BBQ Central horse racing expert, Harry DeHorse, made it in to breakdown the Belmont this coming weekend. We also talked about the business of horse racing and why that sometimes ruins the actual racing part!
Segment 2 & 3: Susan Righetti of Susie Q Brand came on to talk about a very regional style of barbecue called Santa Maria style. If you are from the Santa Maria Valley in California, you are probably very familiar with this…but if you live anywhere else you probably aren’t as familiar. Susan broke down the history of this style of bbq, what cuts of meat are required, how to prepare it for the cooker and what sides to eat with it. Susan also mentioned that the correct wood to use is red oak, which is indigenous to that part of the country!

Lavern Gingerich joined me to talk about the line of bbq equipment he distributes which is Meadow Creek equipment. Lavern talked about how well made this product is and how some of the cookers have very unique and ground breaking features…especially on their chicken cookers.
Bill Karau joined me to talk about his unique bbq pit…the Karubecue! This takes the traditional version of an off-set and turns it upside down. The fire box is open and a draft fan sucks the heat and smoke from the bottom and in to the cooking chamber. The result is a perfectly combusted fire with no creosote or bitter taste.

Perhaps a little heavier subject matter than we are accustomed to here on The BBQ Central Show tonight. I was joined by a representative from Kristie’s Foundation to talk about what Kristie’s foundation does. They provide end of life care to terminally ill children…they are currently in the process of building only the 2nd facility of its kind in the nation. This is a great organization and they are going to have a great bbq benefit in May. Check it out at quenforkids.

I was joined by the guys from BBQ Addicts Jason Day and Aaron Chronister. These guys developed the supremely popular bacon explosion. This is one of the fastest growing items on the internet and we tracked it from birth to present day! It is quite an interesting ride to say the least!

I was joined by Sean Maharris of Coshell Charcoal Company. Coshell is making a unique product that is using coconut shells instead of traditional carbonized wood. I was joined by Ed “Fast Eddy” Maurin in the 2nd segment. Eddy brought us up to speed on his new grill offering in to the market. He is looking at a March 2009 launch date and coming in at $1,895 retail. We also talked a little bit about his new relationship with the makers of the grill and his existing relationship with Cookshack. Cookshack makes the FEC line of cookers and they are working with Eddy on a new product as well…more info to be announced later. Eddy also shared his thoughts about the new scoring system in the KCBS instituted in 2008.

I was joined by 2008 KCBS Team of The Year’s Pit Master Robert Magee from Munchin’ Hogs at The Hilton. We talked about how he was able to pull the championship off against an ever growing field of great cooks. We also talked about his background and how he got in to competitive barbecue. I was joined by Jack Waiboer of Common Interest BBQ Team and Russ Cornette of Smokin’ Coles BBQ Team. These two pit masters teach a competition cooking class with a few other guys in the Carolinas aptly named “The Carolina Pit Masters” class. What is unique about this class versus some others is twofold. First, after they are done cooking, they have qualified SCBA judges to taste the food and have Q&A with. Secondly, this team of teachers do these classes to benefit local charities…in this case, they will be donating to the Shriners in Summerville, SC with their class on March 6th & 7th.

I was finally able to finish off the 4 major competition meats tonight in the BBQ Round Table by covering chicken! Pit master of Uncle Bubba’s BBQ Kevin Tarazewski, owner of Q Barbeque and pit master of the Cool Smoke team Tuff Stone and pit master of the Pellet Envy cooking team Rod Gray joined me to talk about everything related to competition chicken.
Segment one was dedicated to all of the pre-cook or preparation items, the second segment was dedicated to what happens during the cook and the third segment was what they did after the chicken was finished. I was also able to ask them specifically about “bite through” skin and if garnish should be voted in as “mandatory” for the rules of KCBS.
This show has a tremendous amount of info in it and will help both the competitive bbq’er as well as the backyard cook! I would like to thank each of them for their willingness to come on and share their tips and techniques!

I was joined by barbecue great Chris Lilly tonight. We mainly talked about the new product that Kingsford has recently introduced in to the market. It is a combination lump charcoal and briquette rolled in to one. Chris and I have different views on the original Kingsford charcoal that is in the Blue and White bag…he likes it and I am not a big fan. However, I am looking forward to giving the new “Competition Briquette” a try…look for it in April of 2009.
We also talked about his gig at the Greenbrier in West Virginia where he is one of 3 instructors of the BBQ Mastery class. He is also releasing his first go at a cookbook in March of 2009 as well. Last but not least, there is hope that a 3rd installment of the BBQ Challenge series will make it to TV sometime in mid 2009. Chris is very diverse and active in the barbecue community. Tonight I was joined by famed cook book author and master barbecue and griller, Ted Reader. I had him on a few months ago but tonight we focused on “PLANK COOKING” on the grill. Ted talks about the basics of plank cooking and then throws out some pretty wild ideas regarding food items to cook on a plank. Tonight I had on Kell Phelps of the National BBQ Festival. This event houses the Best of The Best BBQ cook-off this coming weekend in Douglas, GA. Kell explained how the even got started, how the event runs, what there is to do at the festival besides the bbq stuff and why there event differs from The Jack Daniels and other big bbq events. The Jack Daniels BBQ Cook-Off is taking place this coming weekend. I spoke with the defending champ Chad Hayden of Moonswiners BBQ Team in the second segment. We spoke about the possibility of him defending his title, if the competition is worthy of the praise and other items related to this exciting event.

A jammed packed show tonight. I was joined by Bob Beeman of Gold Bar-B-Q. We talked about his success at the Oregon State Fair, how much he pocketed during the competition ($6,500) and how he has quickened his learning curve regarding bbq competitions.
In the third segment, pit master Rod Gray, of the Pellet Envy cooking team joined me to talk about his latest victory at the "Smoke on the water" competition in Arkansas. Welcome to the first round of "The BBQ Round Table"...tonight I was joined by Kevin Bevington of HomeBBQ.com, Rod Gray from Pellet Envy and Jim Minion of Two Loose Screws BBQ. In a panel discussion, we talked about the bias that exists at barbecue competitions...specifically regarding how judges score on what they think it should be vs. adhering to the rules of the competition. We also explored the garnish issue and debated if garnish should be removed as a "optional" item in KCBS and be made either a requirement or remove it all together as they do in the Florida Barbecue Association.
